i've been thinking about welsh rarebit since i featured it in a recent cardigan chapter, so i decided to make it for Thursday Night Smackdown's Hobo Mondays challenge, which for april means No Pasta. michelle's Hobo Mondays instructions are to create a meal that serves 2 for $5, or 4 for $10. staples that you normally have around the house don't count. this meal you're looking at here is nearly all staples! i used sourdough bread that i baked myself using my bread staples, beer, cheese, and some field greens tossed in a simple vinaigrette. plus, i used michelle's famous mad egg-poaching and chive-decorating skillz to kick it up a notch or two. still, i'll throw in a few numbers. i'll say the amount i made would feed 4 extremely hungry folks, 8 averagely hungry folks. the welsh rarebit calls for half a bottle of beer: i used Flying Dog Porter, which runs about $1.50 per bottle (i drank the rest, so it went to good use). i used half a pound of tillamook extra sharp cheddar (on sale for $2.99) and a half pound of medium cheddar, also $2.99. the field greens i paid $5.99 for 1 pound. do you know how many freakin' field greens make a pound?! (yeah, 16 ounces. i hear ya, wise guy.)) that's probably about 1 ounce there. eggs....i have no idea what eggs cost. 20 cents each?
so.....i'm not figuring all that up, but it can't be more than $2/serving for 4 extremely hungry folks. and that's if you don't consider beer, cheese, and eggs as staples. but you should. we all should.
