i opened up my King Arthur Flour Baker's Companion cookbook early this afternoon and decided to look for something to bake in there since i haven't used it before. i settled on the vermont maple-oatmeal bread. i didn't read the ingredients very closely, but when i did i had already started making it. it's odd--it called for maple sugar (or brown sugar) and maple extract. i had assumed it called for maple syrup, which is what i had. oh well, i made it my way. it's fine--a good toasting bread, or maybe a peanut butter sandwich, but...nothing special. there's too many other breads to make for me to repeat this one, i think.
