i saw this recipe some time ago, following it from peabody's blog. it's adapted from a recipe from Cooking Light magazine and it's quite light nutrionally speaking--only half a stick of butter for the whole pan of buns (12 good-sized ones), no eggs, not a lot of sugar, and good beta-carotene (not to mention flavor and moisture!) from the pumpkin--but doesn't taste like a "light" recipe at all. these were really, really good. much better than the cinnamon rolls from reinhart's book. i also used the glaze that maddog used in in her wonderful orange almond bundt cake, although i used about 1/4 tsp of orange extract instead of orange liqueur. the slight orange flavor really complimented the pumpkin. i almost added chopped pecans to the streusel filling, and it wouldn've been really good, but i decided not to at the end just to see how well they hold up at the healthier end of the scale. i can't say enough good things about these buns.
