Mesa Grill Corn Muffins
these muffins come from bobby flay's Mesa Grill Cookbook. they are supposed to be a mixture of blue cornmeal batter with yellow cornmeal batter. however, i haven't been able to find any blue cornmeal around here, so i made it entirely with yellow cornmeal. they're pretty good. they would've been better if i hadn't used the lamest jalepenos ever. i've had bell peppers that had more heat. these muffins also have fresh corn kernels, sweet red pepper, onion, garlic, cilantro, and honey. however, they weren't really a scene stealer. i took these over to maddog's and she & chris served some phenomenal smoked pork loin with fabulous ginger slaw and a rich chocolate cake. so, yeah, the corn muffins definitely were not the star. in fact, the soft dinner rolls that i also brought with me were a bigger hit than the corn muffins. they're really good dinner rolls; my favorite, and i make them often. so much so that i thought i had blogged about them before but, in looking for the link to show you, i see that i never have. i'll have to remedy that one of these days.
